Step by step recipe

Pour milk, condensed milk into the pan, add saffron and cardamom pods, heat a little, stirring constantly.

Bring to a boil. Remove from heat and insist for 5 minutes.

Pour the milk into 2 heat-resistant glasses, sprinkle a little saffron and serve immediately.

  1. First, rinse the rice and leave it to dry a little on a flat dish. At this time, you can cook saffron milk and cheese balls.
  2. Saffron veins should be fried in a dry frying pan over medium heat for 20-30 seconds until the aroma appears. They cool off quickly enough. After that, they can be crushed, simply rubbing with your fingers.

Milk needs to be warmed up a little, to about 40 degrees, that is, a little warmer than body temperature. Add chopped saffron to it, after which the milk will become a saturated yellow color. There we send cane sugar and washed raisins, and temporarily leave it alone.

*Note. If you used ground turmeric and cardamom, then just add them to warm milk along with sugar and raisins.

We prepare the oil for frying. To do this, pour the vegetable oil into the dishes (high pot or ladle) and heat it over high heat.

In preheated oil, you can first fry cashews until brown. Then send the balls of cheese. Fry until golden brown, as in the photo below. Then put the balls in saffron milk for impregnation.

  1. We start to cook rice. To do this, in another pan, melt the butter (half of the indicated volume) over medium heat. Make the fire stronger and put the rice. Stir it constantly for 2 minutes. Then gently pour the drinking water, add salt to taste to the top, bring to a boil. After that, set the minimum heat, cover and cook in this way for 10 minutes.

After the specified time, we take out the balls of saffron milk panir, and pour the milk with raisins and spices into rice. Slowly mix the rice, so as not to crush the grains.

*Note. In order not to waste time, you can cook rice and fry cheese balls at the same time, but you need to do this very carefully so that not a single drop of water gets into boiling vegetable oil, as it will fly apart in burning sprays in all directions.

  1. Cover the rice with a lid and cook until tender (5-7 minutes). Then remove the lid and evaporate moisture for 2-3 minutes.

When ready, add slices of the remaining butter, cashews, and mix the rice. When serving, we complement the dish with cheese balls.

Rice with saffron and cheese turns out to be sweetish, very fragrant and well suited for breakfast or lunch. Kesar Panir Pulao is a very satisfying meal that will give the body a lot of nutrients and a boost of energy for the whole day.
